Biofortification is the process by which the nutrient density of staple crops is increased by conventional plant breeding, biotechnology, or agronomy with a view to improving human health. Wheat (Triticum aestivum L.) is the major cereal crop in many parts of the world, accounting for 30 % of global cereal production, and is an important target for biofortification. Within the HarvestPlus biofortification program , a major focus is to breed bread wheat cultivars containing more Zn, with high Fe content an important secondary objective. There is also considerable interest in enhancing selenium (Se) density in bread and durum wheats (T.durum Desf.).
