Chinese rice wine (CRW) is the oldest form of wine, and has been consumed as a traditional drink in China for centuries. Rice is typically taken as the fermenting material, along with wheat Qu and yeast. The rice must be stewed before it is mixed with yeast and wheat Qu. It conventionally takes 20–25 days for the mixture to ferment. The mash then undergoes filtration and pressing, clarification, sterilization, and eventually, storing and aging.
