Organic acids (OAs) are compounds that contain carboxyl groups in their molecular structure. It is widely distributed in the leaves, roots, especially fruits of plants. Common organic acids include aliphatic and aromatic organic acids. Except for a few organic acids existing in a free state, organic acids are generally combined with potassium, sodium, and calcium to form salts, and some of them are combined with alkaloids to form salts.
Organic acids are involved in multiple metabolic activities, such as fatty acid and animo acid synthesis. More and more experimental proves that many environmental stresses stimulate the biosynthesis of OAs. In addition, organic acids play an important role in response to various environmental stresses deficiency of many nutrients including iron, phosphorus, zinc and manganese, etc. Organic acids are also beneficial in plant–microbe interactions at the root-soil interface by acting as carbon and energy source for symbiotic microbes of plant roots which improve plant mineral uptake.
