Determination of apple maturity by Dielectric spectroscopy (CAT#: STEM-ST-0368-WXH)

Introduction

Apple industry has progressed recently because of its advances in production, storage, product development and marketing efficiencies. To further improve of apple industry competitiveness, objective techniques for determining fruit maturity are needed in order to decide the best uses and storage time of the fruit. Immature fruits are more subject to shriveling and mechanical damage; and overripe fruits become soft and mealy with insipid flavor soon after harvest.




Principle

The principle of this technique is to apply an AC signal of small amplitude to an electrode immersed into an electrolyte. The initial disturbance (applied) and the response of the electrode is compared by measuring the phase shift of the current and voltage components and by the measurements of their amplitudes.

Applications

Used to study the response of a sample subjected to an applied electric field of fixed or changing frequency. DS describes the dielectric properties of a material as a function of frequency.
