Aflatoxin B1 (AFB1) is a naturally occurring mycotoxin that can result in detrimental side effects if consumed by humans or animals. AFB1 is produced by filamentous fungi corresponding to Aspergillus section Flavi particularly Aspergillus flavus. AFB1 is found in a wide range of agricultural products including rice, with greater prevalence in tropical and humid climates. The International Agency for Research on Cancer (IARC) has classified AFB1 as a carcinogen for animals and humans and many countries have strict legal regulations concerning AFB1 contamination in food and agricultural products.
