Palm sugar is a local delicacy widely consumed by Asians for making cakes, desserts, food coating or mixed with drinks and beverages. It has continued to be the preferred source of sweetness in local communities and possesses lovely and unique flavours. Traditionally palm sugar is produced from palm sap derived from the tropical palm tree called Arenga pinnata. The sap known as “air nira” is boiled in a large wok on the wood-fired stove for a few hours until it becomes concentrated. It is then poured into bamboo moulds to form pure solid palm sugar. The palm sugar does not contain any type of additive or artificial colouring and can last for years under right storage conditions.
