Trypsin is a member of the serine protease family. Trypsin cleaves the polypeptide at the C-terminus of the lysine and arginine amino acid residues. The optimal pH value of trypsin is between 7.8 and 8.7. The enzyme is inhibited by serine protease inhibitors such as PMSF and metal chelators such as EDTA.

Recombinant human trypsin is a genetically engineered protein expressed in Escherichia coli and purified by high pressure liquid chromatography. The amino acid sequence is identical to that of human trypsin 2. No contaminating enzyme activity from carboxypeptidase A or chymotrypsin. No protease inhibitors such as PMSF are used in the production process.
