Trypsin is a member of the serine protease family. Trypsin cleaves the polypeptide at the C-terminus of the lysine and arginine amino acid residues. The optimum pH for trypsin is between 7-9. The enzyme is inhibited by serine protease inhibitors such as PMSF and metal chelators such as EDTA.

Recombinant porcine trypsin is a genetically engineered protein expressed in Escherichia coli and purified by high pressure liquid chromatography. No contaminating enzyme activity from carboxypeptidase A or chymotrypsin. No protease inhibitors such as PMSF are used in the production process.
