Natural food pigments are used extensively as food additives to enhance sensory response and to promote sales. Several varieties of natural food pigments (carotenoids, anthocyanins, flavonoids, anthraquinones and others) are used as color additives. When natural food pigment is utilized to color food, it is a requirement to indicate what is used if the pigment remains in the final products in a detectable amount.
