Polysaccharides and glycoconjugates as the third kind of important biopolymers have various important physiological functions in biological processes such as cellular recognition, cellular adhesion and immunization. Glycogen is ubiquitous in the animal body and plays a key role as a storage carbohydrate. It is a highly branched homopolysaccharide which consists of α-d-linked (1→4) d-glucose residues with α-d-branch points (1→6). It is soluble in water. Measurement of glycogen content in tissue and solution is of great importance in aspects such as diagnosis of glycogen storage diseases and esophageal cancer and determination of meat quality after slaughter.
