Carotenes are a kind of natural pigment which is the main source of vitamin A. Carotenes found in plants can be divided into α-carotene, β-carotene, and γ-carotene according to the number of double bonds contained. β-Carotene is composed of two retinyl groups while α-carotene and γ-carotene contains single retinyl group. The number of retinyl group decide the vitamin A activity of carotenes. Carotenes contribute to the orange color of the carrot as well as many other fruits and vegetables. During photosynthesis, carotenes serve as accessory pigments for collection of absorb ultraviolet, violet, and blue light and transmit the light energy they absorb to chlorophyll. They are also involved in preventing damage by helping to absorb the energy from singlet oxygen which is an excited form of the O2 produced during photosynthesis.
