Triacylglycerol is an organic compound formed by esterification of three hydroxyl groups of glycerol with three fatty acid molecules. It is a non-polar substance that is stored in the body in a non-hydrated form and is the energy substance with the largest reserves and the most productive capacity in the body. Plant triacylglycerol is mostly oil, animal triacylglycerol is mostly fat. Solid and liquid triacylglycerols are collectively referred to as fats.
