There is an increasing emphasis on the identification and characterization of food flavonoids, which are a structurally diverse class of compounds that includes many isomers. The distinction between isomers remains a challenge within analytical chemistry, especially when multiple types of isomers (e.g. stereoisomers, positional isomers) are present. It is, however, important, as minor differences in structure can affect reactivity and functionality in food systems. Cyclic ion mobility spectrometry (cIMS) is a novel state-of-the-art technique with increased resolving power.
