Minerals and aliphatic organic acids (AOA) greatly influence the taste, aroma, pH, fermentation, and beer stability. This service provides a new and fast dual-opposite injection method and analytically validated it to determine minerals and AOA in beer by capillary electrophoresis.
Initially, simulations were performed on the PeakMaster® software to obtain satisfactory electrophoretic separation conditions, followed by optimizing the background electrolyte composition using a central composite design. These steps allowed the determination of the best condition to separate minerals and AOA simultaneously. The proposed method efficiently determined 12 compounds in 8 min using the background electrolyte composed of 45 mmol L−1 of imidazole, 50 mmol L−1 of formic acid, and 5% of methanol at pH 4.6. The evaluated analytical parameters confirmed the fitness for the purpose of the method, e.g., acceptable apparent recovery values ranging from 86.3 to 110.5%, ensuring its suitability for the analysis of minerals and AOA in beer. The validated method was applied in beers, and 12 compounds were quantified in the samples, corresponding to 8 minerals and 4 AOA. Therefore, this method proved to be a reliable and fast alternative contributing to the quality control of beers regarding their mineral and AOA content.
