Kappa-carrageenan (κ-carrageenan) is a natural polymer, sulfated galactan extracted from red marine macroalgae, which is commonly used in the food industry. It is a disaccharide consisting of 1,3-linked β-d-galactopyranose-4-sulfate and 1,4-linked-3,6-anhydro-α-d-galactose. The content of ester sulfate ranges between 25% and 30% and that of 3,6-anhydro-α-d-galactose between 28% and 35%.
