Glycolipids are glycoconjugates of lipids that are generally found on the extracellular face of eukaryotic cellular membranes, and function to maintain stability of the membrane and to facilitate cell–cell interactions. Glycolipids can also act as receptors for viruses and other pathogens to enter cells. Micelles can help the body absorb lipid and fat soluble vitamins. They help the small intestine to absorb essential lipids and vitamins from the liver and gall bladder. They also carry complex lipids such as lecithin and lipid soluble vitamins (A, D, E and K) to the small intestine.
Lectins are defined as proteins that bind to carbohydrates. The same features that lectins use to defend plants in nature may cause problems during human digestion. They resist being broken down in the gut and are stable in acidic environments, features that protect lectin-containing plants in nature.
