Plant Betalain Detection

Betalains are a class of red and yellow water-soluble pigments found in plants of the order Caryophyllales. Betalains are aromatic indole derivatives synthesized from tyrosine. Betacyanin and betaxanthin are two categories of betalains. Betacyanins appearing red to violet include betanin, isobetanin, probetanin, and neobetanin while betaxanthins appearing yellow to orange include vulgaxanthin, miraxanthin, portulaxanthin, and indicaxanthin. Betanin is commercially used as a natural food dye.
