Lutein is a xanthophyll, which is synthesized only by plants. Lutein is found in high quantities in green leafy and orange-yellow vegetables. It also widely exists in fruits, flowers, and other plants. Lutein absorbs blue light and therefore appears yellow at normal concentrations and can appear orange or red at high concentrations. In green plants, lutein is able to modulate light energy and acts as non-photochemical quenching agents to deal with triplet chlorophyll, which is an excited form of chlorophyll overproduced at very high light levels during photosynthesis. Lutein is considered as an important dietary supplement due to its functions of eye protection, anti-oxidation, anti-cancer, delaying early arteriosclerosis, preventing diabetes, and so on. It is also widely used for pharmaceutical, pet food, and animal and fish feed production.
